Another awesome #cleaneating dinner is in the books here at the #fixerupperfarmhouse! This is a super easy Pork and Cabbage Stew. The longest parts were peeling and cutting the carrots and potatoes, and waiting for my pork loin to thaw. I did cook the cubed 1/2 lb of pork loin in one of my Pioneer Woman skillets with some extra virgin olive oil, Himalayan pink salt, and some pepper.
.After cooking the pork in the skillet, I threw it into my crockpot that already had a package of Marketside angel hair cabbage, 3 sliced carrots, and a package of baby golds that had been peeled and sliced. The recipe called for one Yukon gold potato, but, hey, you take what your grocery store has! It was another great opportunity to use pop and cook sauteed glazed onions (no tears! Yay!). I also threw in some organic Great Value caraway seeds, 2 cans chicken broth (low sodium is better, but our store was out), and a box of Sam’s Choice Italia crushed tomatoes. Let it cook on high for 3 hours or low for 6.
