Tonight’s dinner was easy peasy. I decided to do bbq meatballs in the InstantPot. I had some honey and honey BBQ sauce in the cabinet so I decided to mix them up.
Here is what I used:
1 lb. ground turkey (the leaner the better)
2 cubes of Pop & Cook Sauteed Glazed Onions
1/4 cup whole wheat panko bread crumbs
1 cup BBQ sauce (flavor of your choice) (lower calories are better)
3 egg whites
1/4 cup of honey
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp salt
1/4 tsp black pepper
I made the meatballs up first by mixing the ground turkey, panko, onions, and seasonings in a bowl. I then made them into small meatballs. I made 23, but I would say you could make 20-25 depending on what size you did them.
I then sprayed my InstantPot and added 1/4 cup of water. Next I added the honey and honey BBQ sauce. Finally, I put the turkey meatballs in.
I put the lid on, sealed it, set it on manual for 8 minutes, and let it cook. I let them sit for close to 10 minutes and the pressure released naturally. This gave me time to cook my 4 cheese mac and cheese and carrot and peas mixture for the sides.
You can pair it with whatever your family likes to eat.
These were delicious! Kid approved!! We didn’t have any leftovers tonight!
TIP: Turn the InstantPot on Saute to lessen the time it takes for it to pressurize!
